The Best BBQ Recipes for the Ultimate Staycation

Have you planned your staycation yet? Whether you are chilling in your back garden, taking your tents on a road trip or renting a home away from home, a BBQ is the perfect family fun weekend activity. All you need is tasty food, great company and a little bit of good (fingers crossed) weather. Check out our easy BBQ recipes for making the most out of your staycation.

Beef Burgers

Burgers are a BBQ staple and they are very easy to make from scratch! They are definitely one of the ultimate BBQ Recipes. It's also often a cheaper way to make them if you have a big bunch to feed! You can also prepare the patties in advance and keep them in the fridge in a sealed container for up to 2 days before cooking. Leftover mince? Why not try making meatballs. They are perfect for a pasta bake, spaghetti or casserole dish. A definite crowd-pleaser for during the week.

Ingredients

  • 450g Mince Beef (the higher the fat % the more flavour your burgers will have!)
  • 1 Small Diced Onion
  • 1 Egg

Method

  1. Combine all your ingredients in a large bowl. Season with salt and pepper. You can also add chilli flakes for an extra kick or smoked paprika for a lovely BBQ flavour.
  2. Divide into patties, make sure your patties are all the same thickness to ensure they cook evenly.
  3. Grill or BBQ your patties on medium heat for 3-4 minutes per side. They should be cooked through when serving.

Side dishes don't have to be fancy; they are there to complement your main dish. These sides are perfect for piling in the middle of the table during a BBQ and letting everyone dig in. They also store well in the fridge for a few days, so you'll have some quick lunches or midweek dinners on hand. So, we couldn't do a BBQ recipes blog without a few super sides.

Baked Potatoes with Oven Roasted Garlic

When baking your potatoes add a few full heads of garlic to your baking tray. Roasted garlic has a tangy, sweet flavour and is perfect mashed into a baked potato. Or you can remove the garlic from the cloves and smear on your burger, grilled chicken or stir-fried veg.

Method

  1. Pierce your potatoes with a sharp knife or fork. Add your potatoes to a preheated oven for 50mins - 1hr, depending on the size of your spuds!
  2. Turn the potatoes halfway through cooking. Serve with fresh rosemary, butter and a dash of salt.

Pasta Salad with Homemade Pesto

This pasta salad is the perfect crowd filler. It's tasty eaten hot or cold and it stores in the fridge for up to 4 days., So, you can make it the night before or keep some for lunch the next day (if any is left!)

Ingredients

  • 350g Fusilli Pasta (Penne, Farfalle and Rigatoni work well too!)
  • 200g Pine Nuts
  • Parmesan Cheese
  • Large Bunch of Fresh Basil Leaves
  • 2 Garlic Cloves
  • Olive Oil
  • Salt & Pepper

Method

  1. To make the pesto, combine the basil, garlic and half the pine nuts in a food processor.
  2. Add a large handful of Parmesan cheese and continue to pulse in the processor.
  3. Slowly add olive oil until the mixture binds together.
  4. Add salt and pepper to taste.
  5. Cook your fusilli pasta for 10-11 minutes, the pasta should have a slight bite to it.
  6. Add the pasta to a serving dish and cover with your pesto.
  7. Stir in the remaining pine nuts and sprinkle with Parmesan shavings.
  8. Add salt and pepper to taste. You can serve the pasta salad with a dash of lemon juice or some chilli flakes for an extra kick! You can also roast some cherry tomatoes or red peppers to give the dish a bit of colour.
