To start off, we'll be making a classic dish that's perfect for any occasion: Roasted Chicken. This recipe is simple and delicious, and it's sure to be a hit with your family and friends.

Roast Chicken

Ingredients:

  • 1 Whole chicken
  • Salt
  • Pepper
  • Olive oil
  • 1 lemon (optional)

  • Rosemary, thyme, sage (optional)

Directions:

  1. Preheat the oven to 190°C.

  2. Season the chicken generously with salt and pepper. Stuff the cavity of the chicken with 2 lemon halves. You can also add some herbs, such as thyme, sage or rosemary, for extra flavour.
  3. Drizzle the chicken with olive oil and rub it all over to evenly coat the skin.
  4. Place the chicken in the preheated oven on a rack or a roasting pan.
  5. Roast the chicken for about 70-80 minutes, or until the internal temperature reaches 74°C when measured with a meat thermometer. The cooking time will vary depending on the weight of your chicken when raw.
  6. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.

While the chicken is roasting, we can make a side dish to go with it like roasted vegetables.

Oven Roasted Vegetables

Ingredients:

  • Carrots
  • Courgette
  • Bell peppers
  • Red onion
  • Olive oil
  • 3 crushed garlic cloves
  • Salt
  • Pepper
  • Rosemary (optional)

Directions:

  1. Preheat the oven to 190°C
  2. Cut the vegetables into similar-sized pieces
  3. Season the vegetables with salt and pepper and crushed garlic
  4. Spread the vegetables on a baking sheet
  5. Drizzle with olive oil and toss to coat
  6. Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized

Once the chicken has finished cooking, remove the roasting tray from the oven. You can transfer the chicken to a chopping board, be sure to empty the cavity of juices and remove the lemon halves if used. Now it's time to make the gravy!

The Perfect Chicken Gravy

Ingredients:

  • 2 tbsp All-purpose flour
  • 250ml chicken stock
  • A dash of Worchester sauce
  • Salt
  • Pepper
  • Thyme, rosemary & sage (optional)

Directions:

  1. Once the chicken has been removed from the pan, transfer the pan to your hob or pour the remaining juices into a small pot.
  2. add your all-purpose flour and mix to create a paste.
  3. Slowly add your chicken stock, stirring constantly to avoid lumps. You can add more or less stock depending on your desired consistency.
  4. Season with salt, pepper, Worchester sauce and herbs.
  5. Allow the gravy to simmer for 5-7 minutes to cook out the flour.
